Bean and Cheese Flautas

Not only is this recipe super simple, it’s versatile and delicious. Keep it simple with beans and cheese, or add some shredded chicken, beef, or pork to change them up a little. With a few pantry ingredients, within minutes, you can have a fantastic weeknight dinner. Add some tasty sides like guacamole and sour cream and you have a full-fledged fiesta.
Ingredients:
8 small flour tortillas (taco size)
1 can black beans, drained
16oz Shredded cheddar cheese
cooking spray
1/2 cup enchilada sauce https://www.recipesandqs.com/blog/enchilada-sauce
Instructions:
Preheat oven to 350.
To to assemble the Flautas, spoon about a tablespoon of cheese and a tablespoon of beans into each tortilla and tightly roll them like a cigar.
Arrange the flautas in a row, seam side down, in a baking dish coated with cooking spray and lightly spray the tops of the Flautas as well.
Bake for 15-20 minutes and gently flip the Flautas.
Bake for an additional 15-20 minutes or until browned and crispy.
Spoon enchilada sauce over each Flauta and top with remaining cheese.
Bake for an additional 10-15 minutes or until cheese is melted and slightly crispy.
*Optional: Serve with guacamole, sour cream, and a side of rice.
Note: To freeze, bake Flautas, do not add enchilada sauce or cheese topping, cool to room temperature, and freeze in a ziplock bag. Bake from frozen at 350 for 40 minutes and then top with sauce and cheese.
