Chicken and Dumpling Soup


I like to think that this dish is the one that my kids will associate with “home” once they’ve grown up. It’s so simple to make, but oh so comforting.


Ingredients:


  • 2 cups baking mix (Jiffy or Bisquick)

  • 1/2 cup milk

  • 64 oz. chicken broth

  • 1/2 cup chopped carrots

  • 2 boneless breasts chicken, cubed

  • 2 tbs parsley, minced

  • salt and pepper to taste


Instructions:


In a bowl, combine the baking mix and milk and stir to combine. Set aside.


Add carrots to the broth and season with salt and pepper.


Cover and bring the broth to a boil.


Add chicken and parsley.


Spoon the dumplings into the soup.


Cover, reduce heat to medium-low, and cook for 15 minutes.


Gently flip each dumpling. Cover and cook for an additional 8-10 minutes.


Servings: 4-6
