Peasant Bread

Ingredients:
4 cups flour
1/2 tablespoon active dry yeast
2 teaspoons salt
2 cups water
Instructions:
In a large glass bowl, mix all ingredients together with a wooden spoon. The dough will be very sticky.
Cover with a kitchen towel and let rise for 2 hours in a warm area.
Split dough in half and shape into two round loaves, or boules. Place on a baking sheet lined with parchment paper.
Dust the loaves with flour and using a sharp knife, make three slits across the top of each loaf.
Let rise for one hour.
Place a small oven-safe dish filled with water on the bottom rack of the oven and preheat oven to 450. The steam will help create a crusty outer texture on the bread.
Bake bread for 20-30 minutes or until golden brown.
Remove from oven and cool loaves on a wire rack.
Makes 2 large or 4 small loaves.
